Quinoa Breakfast Bowl


Want something that says comfort but in a healthy way?  Then this Quinoa Breakfast Bowl recipe is for you.  Make this bowl to nourish you on cold days.

Serves: 1

INSTRUCTIONS

Cook Quinoa: Start by cooking the quinoa if you haven’t already. Use a ratio of 1 part quinoa to 2 parts water, bring to a boil, then simmer covered for about 15 minutes or until all water is absorbed. Fluff with a fork and let it cool to room temperature. Assemble the Bowl: In a serving bowl, place the cooked quinoa as the base. Mix mashed banana, cinnamon, chia seeds and almond milk with quinoa until well combined. Arrange the rest of the ingredients in the bowl to your liking. If you want to eat the bowl warm, add everything to a saucepan and heat to your liking.  You can eat it at room temperature as well as cold.  Serve and enjoy.

INGREDIENTS

1 cup cooked quinoa (cook in water according to package instructions)

1 tablespoon chia seeds

1 ripe banana mashed

1 to 2 tablespoons coconut flakes or shreds

¼ cup pomegranate seeds

¼ cup raspberries

½ teaspoon cinnamon

½ cup almond milk

 

Optional:

Feel free to: 

  • Add other fruits like strawberries, blueberries, blackberries 
  • Add chopped dates or raisins or raw honey or monk fruit or date syrup for sweetener 
  • Add a few chopped nuts and seeds
